A versatile root vegetable, can be roasted, boiled, mashed (with potatoes or without), sauteed in butter, or just slice them thin (or grate them) and salt them to eat raw in salads. The greens are great too! (However, the greens are often heavily damaged by frost in the coldest months of winter, so expect greens in the fall, not late winter/early spring.)
