Winter squash is incredibly versatile, equally at home in savory or sweet applications (Spaghetti squash is the exception). Try substituting pureed winter squash for banana in your favorite pancake or tea cake recipe.
Butternut The classic winter squash. Smooth, sweet orange butternut requires peeling. Contains one and a half pounds.
Spaghetti Not for pureeing, this special squash makes a GF noodle substitute. Roast the pale flesh until you can shred the flesh with a fork, then serve with your favorite pasta sauce. Contains about two pounds.
Candy Roaster If you take a chance on this squash, it will reward you with silky, flavorful flesh. It's also a great deal, at $2 vs $2.50 per pound. We roast it all a once and then freeze the puree or keep roasted pieces in the fridge to add to other meals. You can also cut off a portion at a time, cover the cut end in plastic, and keep in the fridge. Remove any skin warts, but otherwise the skin is edible. Contains about six pounds.
Kabocha Similar to the candy roaster in exceptional eating quality, but a bit less of a commitment. Contains about four pounds.
